CHM 310 - Principles Of Fermentation Science

Description: This course is a survey of different types of fermentation, including alcoholic fermentation (beer, wine, sake, mead, cider) and non-alcoholic fermentation (kimchee, pickles, cheese, yogurt, ginger beer, kombucha, vinegar, soy sauce, chocolate, coffee, vanilla). The course establishes the framework of fermentation science by identifying fermentable sugars, the yeast and bacteria that metabolize them, and exploring how these processes are conducted in a safe and consistent manner. Satisfies the General Studies "Scientific Literacy-Social Science" requirement and the essential skill of quantitative reasoning and is prerequisite to CHM 311 and CHM 312. Letter grade only.
