Sustainability
Description: This course provides a broad introduction to issues of sustainability in the food system. It introduces students to core concepts in food systems and sustainability, and it also examines how scientific and regulatory decisions about food systems are made in the context of US constitutional democracy. The course is focused on North America, but considers how US food systems are linked with food systems in other nations; and also, how food system sustainability issues span national boundaries and accumulate across regional and global scales. This is a required course for the minor in Sustainable Food Systems. Letter grade only.
